Cherry Chocolate Almond Cookies | Better for you Baking
Some days I just feel like baking. I find it therapeutic in a way and I also love a good sweet treat on a Sunday afternoon.
So, this morning, I whipped out the big dog and got to work.
My recipe of choice was one that I got from my aunt a couple of weeks ago. My family got together to clean at my grandma’s house in preparation for an auction and she brought some Cherry Chocolate Almond Cookies for us to enjoy as we worked.
Oh boy did I enjoy them…I think I probably ate 6 of them that day. Whoopsies!
The good news is that she had mentioned that they were a healthier recipe so that my uncle could eat them without worrying about the dietary info.
She sent me the recipe and it was pretty clean, but I wanted to challenge myself to make it even better.
I made a few substitutions and this is the recipe I came up with:
Almond Cherry Chocolate Cookies
What you’ll need:
6 TBS Coconut Oil
1/3 Cup Coconut Sugar
1 Whole Egg
1 Egg Yolk
1 TSP Vanilla Extract
1/3 Cup Chocolate (you could use sugar free), Melted
1 1/3 Cup Flour (this could be substituted with gluten free flour, coconut flour, or almond flour)
1/3 Cup Dried Cherries
1/3 Cup Sliced Almonds
What You’ll Do:
Step 1- Mix together Coconut Oil, Coconut Sugar, Eggs, and Vanilla until well combined.
Step 2- Add in melted chocolate (you could use a double boiler, I just microwaved mine for 30 second increments until melted).
Step 3- Stir in flour.
Step 4- Fold in cherries and almonds.
Step 5- Cover dough and let chill in refrigerator for 1 hour.
Step 6- Once dough is chilled, preheat oven to 350. Grease or line a baking sheet.
Step 7- Place 1 inch balls of dough (I use a small ice cream scoop) on cookie sheet and bake for 10-12 minutes.
This recipe will make about 30 cookies unless you live in a family like mine and half of the cookies are eaten before they’re even baked!
Grandma, don’t even lecture me on the salmonella!!!
