5 Ingredient Pumpkin Spice Cookies


September is here and that means a few very important things:
1. It’s my birthday month.
2. The weather is about to be AMAZING.
3. Leggings are now acceptable anytime, anyday (as long as your sweater is long enough).

4. IT’S PUMPKIN SPICE TIME!!!! Rejoice!

In honor of number 4, and my husband’s ‘typical white girl’ (…boy…) obsession with anything pumpkin spice flavored, today I’m making some super easy, super delicious, and super heathy(ier) 5 Ingredient Pumpkin Spice Cookies!!

As I mentioned, my husband is a pumpkin spice freak (in the best way possible) so I spend a lot of time baking pumpkin treats for him in the fall and winter months. I have been through all of the pumpkin nooks and crannys of Pinterest and have found several recipes that I liked, but just didn’t quite hit the mark. So I started experimenting and ended up with this recipe.

I love that this pumpkin spice cookie recipe is easy and I don’t have  to get my mixer out. I also love the fact that these cookies aren’t loaded up with sugar and butter so they are waist-line friendly.

These pumpkin spice cookies are fantastic for anyone with a non-traditional diet. They are gluten free and vegan and could easily be made sugar free as well. Your kids will love making them (and eating them)!

Here's what you'll need:
 1 Cup Pumpkin
 2 Cups Quick Oats (I use gluten free)
 1/3 Cup Sweetener (I use organic coconut sugar)
 1/2 Cup Nut Butter (I use organic creamy peanut butter)
 1 TBS Cinnamon

 Optional Add-Ins:
 Chocolate Chips
 Nuts
 Protein Powder

Here’s what you do:

Step 1– Preheat oven to 350. Lightly spray sheet pan. Gather ingredients.

Step 2– Combine oats, cinnamon, sugar, and pumpkin.

Step 3- Add peanut butter. Mix.

Step 4- Scoop cookies (I like to use a small ice cream scoop) onto sheet pan and press lightly.

Step 5- Bake cookies for 12 minutes (15 minutes if you don’t like your cookies chewy).

Step 6- Remove from oven and allow cookies to cool.
